Mexico: Mexico Publishes Proposed Changes to NOM-187

On July 3, 2023, the Mexican Secretariat of Health proposed changes to the existing NOM-187 published in 2003. The purpose of the draft amendment to NOM-187 is to establish the sanitary specifications, denominations and commercial information that must be adhered to in products made from nixtamalized corn (e.g. masa, flours, tortillas, tostadas), as well as the sanitary provisions that must be followed by the establishments where they are processed. NOM-187 applies to both domestic and imported products, excluding snacks.
